Cassava, also known as manioc, is a plant that grows in tropical climates close to the equator. It is a woody shrub that is widely cultivated in countries close to the equator. The top three countries in the cultivation of cassava are Nigeria, Brazil and Thailand.
Apart for being a major staple food in many parts of Africa, it is also a popular food ingredient in Brazilian cuisine. Typically, cassava roots are processed and milled into locally‑customized versions of flour or meal. As such, they are used in popular traditional dishes or baked and dessert products in this tropical countries where they are grown in abundance.

Banana Bread Recipe
Preparation time: 10 min   /   Cooking time: 55 min
Ingredients:
3 Over-ripe Bananas
1/2 Cup Melted Butter
3/4 Cup Coconut Sugar (regular white sugar if not Paleo)
1 Free-range Egg, beaten
1 Tsp Vanilla extract
1 Tsp Bicarbonate of soda
1 1/2 Tsp Baking powder
Pinch of Salt
10 ml Cinnamon
1 1/2 Cups Health Riot Cassava flour
Preparation:
Preheat oven to 170 degrees Celsius and butter a 4 x 8 inch loaf pan.
In a large bowl, mash ripe bananas with a fork until very smooth. Stir the melted butter into the mashed bananas. Mix in the Bicarbonate of soda, baking powder and salt. Stir in the sugar, beaten egg and vanilla extract. Sift and then mix in Health Riot Cassava flour.
Pour the batter into the prepared loaf tin and bake for 50–60 minutes, or until a skewer inserted into the centre comes out clean.
